Market Muffins

Byron Community markets are on tomorrow and I always like to have snacks on hand. Tomorrow’s featured snack is Plum and Cinnamon Muffins – Yum!!
Stop by and grab one – not sure how long they'll last though! Otherwise here’s the recipe. It’s from one of my favourite cookbooks, “Wholefood” by Jude Blereau.
Blood Plums with Cinnamon1 cup plain spelt flour1 cup wholemeal spelt flour2 ½ tsp baking powder½ cup rapadura sugar3 blood plums, cut into quarters½ tsp cinnamon1 tsp vanilla extract70gr butter, melted¾ cups milkCinnamon Topping½ cup of walnuts or pecans1 tsp cinnamon2 Tbsp coconut2 Tbsp brown sugarPreheat oven to 180°C.Mix flours, baking powder and sugarAdd plums and stir throughAdd vanilla, butter and milkMix and set aside for a few minutes to allow batter to absorb moistureAdd more milk if necessary – want a wettish mixture that moves overthe spoon but not runnySpoon batter into muffin tin and sprinkle topping mixture onBake for 35-40mins then cool in tin for 5 mins before transferring to wire rack
